Chef Laurence and partner Lucy created Billy Nomads from their shared passion of bringing people together with food. Whilst walking the Camino de Santiago in Spain, we would buy local ingredients, and cook whenever and wherever we could, inviting strangers, and solo travellers to join us, sharing stories and connecting, sometimes not speaking the same language but finding connection over food.
The experience was so special we knew we wanted to incorporate a sense of community and togetherness into the foundations of our business.
